Cucumber Salad/Sa-lat Tang Gua
This refreshing cucumber salad can be served with a meal or as a snack. It is a popular side dish
with Thai spring rolls.
6 cherry tomatoes, halved, or 2 Roma tomatoes, diced
2 cucumbers, peeled, seeded, and coarsely shredded
2 green onions, finely chopped
2 tbsp. fish sauce
1/4 tsp. crushed red pepper flakes*
2 tbsp. lime or lemon juice
2 tbsp. sugar
fresh cilantro for garnish (optional)
1. Combine all ingredients except cilantro in a large bowl. Lightly crush tomatoes and green onions with a large spoon and mix well.
2. Garnish salad with fresh cilantro.
Serve cold or at room temperature. Drain off any excess liquid just before serving.

Serves 4 to 6
* When cooking with red pepper flakes or ground red pepper, a little goes a long way. It is easy to add a little more red pepper when you want to and impossible to take it out when there’s too much.Try adding l/8 teaspoon of pepper flakes at a time, then tasting.
